What You’ll Do:
- As a Japanese Specialty Cuisine Sous Chef, you will play a key role in bringing authentic Japanese cuisine to airline passengers around the world. This is a hands-on culinary leadership opportunity where you will combine traditional cooking expertise with team leadership, menu execution, and large-scale food production.
- Prepare and execute authentic Japanese meals from scratch, including entrees, side dishes, sauces, and specialty menu items.
- Lead and support a team of culinary professionals while ensuring quality, consistency, and adherence to production timelines.
- Execute recipes, portioning standards, and plating specifications according to airline and customer requirements.
- Ensure all food is prepared, packaged, and presented to the highest standards of quality, safety, and visual appeal.
- Partner with culinary and operations teams to support menu rollouts, recipe testing, seasonal offerings, and continuous improvement initiatives.
- Maintain compliance with HACCP, food safety, sanitation, labeling, and temperature control requirements.
- Monitor inventory levels, assist with purchasing activities, and support waste reduction and cost-control initiatives.
- Collaborate across departments to ensure on-time delivery and successful execution of daily production schedules.
Qualifications You Have:
- Ability to read, write, and speak Japanese.
- Minimum of 5 years of professional culinary experience preparing authentic Japanese cuisine in a high-volume, specialty, or production-focused environment.
- Leadership experience training, coaching, and supervising culinary team members.
- Strong understanding of food safety, sanitation, and HACCP requirements.
- Experience supporting menu implementation, recipe development, customer presentations, or culinary innovation initiatives is a plus.
- Culinary degree, formal culinary training, apprenticeship, or equivalent hands-on experience preferred.
- Ability to thrive in a fast-paced production environment while maintaining exceptional attention to detail and quality standards.
- Willingness to work onsite near IAH Airport with a flexible schedule supporting a 24/7 operation.
